Description

Ingredients

Dry Ingredients:

  • 1½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg

Wet Ingredients:

  • 1 cup finely grated zucchini (moisture squeezed out)
  • ⅓ cup vegetable oil
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup plain Greek yogurt or sour cream

Additional:

  • ¾ cup mini or regular chocolate chips

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners or by greasing lightly.
  2. Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Prepare wet ingredients: In a large bowl, whisk oil, brown sugar, granulated sugar, eggs, vanilla, and Greek yogurt until smooth. Stir in grated zucchini.
  4. Combine and bake: Add dry ingredients to wet ingredients, mix until just combined, then fold in chocolate chips. Divide batter into muffin cups and bake for 18–22 minutes until a toothpick comes out clean. Cool before serving.

Notes

  • These muffins stay moist for several days and freeze well.
  • For a healthier option, use half whole wheat flour and reduce sugar slightly.
