Description

These Chocolate Chip Peanut Butter Granola Cookie Bars are a delightful combination of flavors and textures, perfect for a satisfying snack or dessert. The chewy granola base is studded with mini chocolate chips and crunchy nuts, all held together with creamy peanut butter and sweet honey. Easy to make and even easier to enjoy!


Ingredients

For the bars:

  • 1 cup creamy peanut butter
  • ½ cup honey or maple syrup
  • ¼ cup melted coconut oil or unsalted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups old-fashioned oats
  • ½ cup whole wheat flour (or all-purpose)
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup mini chocolate chips (plus extra for topping)
  • ¼ cup chopped peanuts or almonds (optional)


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Mix wet ingredients: In a large bowl, whisk together the peanut butter, honey, coconut oil, egg, and vanilla until smooth and combined.
  3. Add dry ingredients: Add the oats, flour, baking soda, and salt, and stir until a thick dough forms.
  4. Stir in mix-ins: Fold in the chocolate chips and nuts, if using.
  5. Bake: Press the mixture evenly into the prepared pan and sprinkle a few extra chocolate chips on top. Bake for 18–22 minutes or until golden brown around the edges and set in the center.
  6. Cool and slice: Let cool completely in the pan before slicing into bars.

Notes

  • For a softer texture, bake on the shorter end of the time range.
