Description

These Chocolate Chip Peanut Butter Granola Cookie Bars are a perfect blend of wholesome oats, rich peanut butter, crunchy granola, and melty chocolate chips. Easy to make and baked to golden perfection, they serve as a delicious snack or quick breakfast treat that’s naturally sweetened with honey or maple syrup.

Ingredients

Dry Ingredients

  • 1 ½ cups rolled oats
  • ½ teaspoon cinnamon
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup granola
  • ½ cup chocolate chips

Wet Ingredients

  • ½ cup peanut butter (unsweetened)
  • ¼ cup honey or maple syrup
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper to prevent sticking and make removal easier.
  2. Mix Dry Ingredients: In a large mixing bowl, combine rolled oats, cinnamon, baking soda, salt, and granola. Stir well to evenly distribute all dry components.
  3. Combine Wet Ingredients: In a separate bowl, whisk together the peanut butter, honey or maple syrup, and vanilla extract until smooth and homogenous.
  4. Combine Wet and Dry Mixtures: Pour the wet mixture into the dry ingredients bowl. Stir thoroughly until all ingredients are well combined and form a sticky mixture.
  5. Add Chocolate Chips: Gently fold in the chocolate chips to ensure they are evenly dispersed throughout the mixture without breaking them up.
  6. Press into Pan: Transfer the mixture into the prepared baking dish. Using a spatula or your hands, press the mixture down evenly and firmly to form a compact layer.
  7. Bake the Bars: Place the baking dish in the oven and bake for 15 to 18 minutes, until the edges turn golden brown and the center is firm and set.
  8. Cool and Slice: Remove from the oven and let the bars cool completely in the baking dish. Once cooled, lift the bars out using the parchment paper and cut into 9 equal squares.

Notes

  • Use natural peanut butter without added sugars for a healthier option.
  • You can substitute honey with maple syrup for a vegan-friendly version.
  • Store the bars in an airtight container at room temperature for up to 5 days or refrigerate for longer freshness.
  • For added crunch, toast the oats and granola lightly before mixing.
  • Feel free to substitute chocolate chips with dried fruit or nuts according to preference.
