Ingredients
Dry Ingredients:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
Wet Ingredients:
- 1 cup unsalted butter (softened)
- 1 cup brown sugar (packed)
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Mix-ins:
- 1 1/2 cups old-fashioned oats
- 1 cup sweetened shredded coconut
- 1 1/2 cups semi-sweet chocolate chips
Instructions
- Preheat and Prepare: Preheat the oven to 350°F and line baking sheets with parchment paper.
- Cream Butter and Sugars: In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually mix the dry ingredients into the wet ingredients until just combined.
- Add Mix-ins: Stir in the oats, coconut, and chocolate chips.
- Bake: Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10–12 minutes until golden. Cool on the baking sheet before transferring to a wire rack.
Notes
- For crispier cookies, bake a minute or two longer.
- For softer cookies, remove from the oven as soon as the centers look set.
- Dough can be chilled overnight for a thicker cookie.
