Description

Indulge in these delicious Chocolate Chip Cookies with Oatmeal & Coconut for a perfect blend of flavors and textures. These cookies are soft, chewy, and packed with sweet coconut, hearty oats, and rich chocolate chips.


Ingredients

Dry Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients:

  • 1 cup unsalted butter (softened)
  • 1 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Mix-ins:

  • 1 1/2 cups old-fashioned oats
  • 1 cup sweetened shredded coconut
  • 1 1/2 cups semi-sweet chocolate chips


Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F and line baking sheets with parchment paper.
  2. Cream Butter and Sugars: In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually mix the dry ingredients into the wet ingredients until just combined.
  4. Add Mix-ins: Stir in the oats, coconut, and chocolate chips.
  5. Bake: Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10–12 minutes until golden. Cool on the baking sheet before transferring to a wire rack.

Notes

  • For crispier cookies, bake a minute or two longer.
  • For softer cookies, remove from the oven as soon as the centers look set.
  • Dough can be chilled overnight for a thicker cookie.
