Ingredients
Pie Crust
- 1 9-inch pie crust (store-bought or homemade)
Filling
- 1 ½ cups fresh or frozen pitted cherries
- ¾ cup granulated sugar
- 2 tablespoons cornstarch
- ¼ teaspoon almond extract
- ½ teaspoon vanilla extract
- ½ cup semisweet chocolate chips
- 1 tablespoon lemon juice
- 1 tablespoon butter (cut into small pieces)
Topping
- 1 egg (beaten, for egg wash)
- Optional coarse sugar for topping
- Optional whipped cream or ice cream for serving
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the pie.
- Prepare Filling: In a medium saucepan over medium heat, combine cherries, sugar, cornstarch, lemon juice, almond extract, and vanilla extract. Stir constantly until the mixture thickens and bubbles, about 5 to 7 minutes.
- Add Chocolate: Remove the saucepan from heat and stir in the semisweet chocolate chips until they melt and blend evenly into the filling.
- Prepare Pie Crust: Roll out the pie crust and place it in a 9-inch pie dish.
- Fill the Crust: Pour the cherry-chocolate filling into the pie crust and dot the top with small pieces of butter.
- Top the Pie: Optionally, cover with a second crust or create a lattice pattern on top. Brush the top crust with the beaten egg wash and sprinkle with coarse sugar if desired.
- Bake: Bake the pie in the preheated oven for 40 to 45 minutes, or until the crust is golden and the filling is bubbling.
- Cool and Serve: Let the pie cool at room temperature for at least 1 hour before serving. Serve with whipped cream or vanilla ice cream if preferred.
Notes
- If using frozen cherries, thaw and drain thoroughly before using to avoid excess moisture in the filling.
- Adjust the amount of sugar depending on the tartness or sweetness of your cherries to achieve desired flavor balance.
- For a richer chocolate flavor, substitute semisweet chocolate chips with dark chocolate chips.
- This pie is best enjoyed slightly warm or at room temperature for optimal taste and texture.
