Description

These Chocolate Berry Bars are a delightful no-bake treat combining fresh strawberries, blueberries, and raspberries layered with toasted almonds, coconut flakes, and chia seeds, all drizzled with melted dark chocolate and coconut oil. Perfect for a healthy snack or dessert, these bars freeze to a firm, refreshing texture that’s as delicious as it is nutritious.


Ingredients

Fruits

  • 1 cup fresh strawberries, chopped into small pieces
  • ¾ cup fresh blueberries
  • ¾ cup fresh raspberries

Chocolate Layer

  • ¾ cup dark chocolate chips
  • ¼ cup coconut oil

Toppings

  • 2 tablespoons coconut flakes
  • ¼ cup slivered almonds
  • 1 tablespoon chia seeds


Instructions

  1. Melt Chocolate: In a medium microwave-safe bowl, add the dark chocolate chips and coconut oil.
  2. Microwave Chocolate: Heat in 1-minute increments, stirring between each, until melted and smooth.
  3. Set Chocolate Aside: Leave the melted chocolate at room temperature while you prepare other ingredients.
  4. Toast Almonds and Coconut: Preheat a large skillet over medium heat.
  5. Add Nuts and Coconut: Place the slivered almonds and coconut flakes in the skillet.
  6. Toast Until Golden: Stir frequently until almonds and coconut are golden brown and fragrant.
  7. Set Toasted Ingredients Aside: Remove from heat and set aside to cool.
  8. Prepare Loaf Pan: Line a 9×5 inch loaf pan with parchment paper for easy removal of the bars.
  9. Layer Berries: Add the chopped strawberries, blueberries, and raspberries into the loaf pan in layers for even distribution.
  10. Add Toppings: Sprinkle the toasted almonds, coconut flakes, and chia seeds evenly over the berries.
