Ingredients
For the Chipotle Shrimp:
- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 tablespoon chipotle in adobo sauce, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
For the Bowl:
- 2 cups cooked rice (white, brown, or cauliflower)
- 1 cup black beans, rinsed and drained
- 1 cup corn kernels, fresh, canned, or frozen
- 1 avocado, sliced
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
Optional Toppings:
- Sour cream
- Shredded cheese
- Sliced jalapeños
- Hot sauce
Instructions
- Prepare the Chipotle Shrimp: In a bowl, toss the shrimp with olive oil, chipotle in adobo, smoked paprika, cumin, garlic powder, and salt until evenly coated.
- Cook the Shrimp: Heat a skillet over medium-high heat and cook the shrimp for 2–3 minutes per side, or until pink and cooked through.
- Assemble the Bowls: Divide the rice among serving bowls. Top each with black beans, corn, chipotle shrimp, avocado slices, red onion, and cilantro. Squeeze fresh lime juice over each bowl and add any desired toppings. Serve warm.
