Ingredients
- 1 bag thick-cut tortilla chips
- 1½ cups shredded sharp cheddar cheese
- 1½ tsp chili powder
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp paprika (smoked or sweet)
- Salt, to taste
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C). Spread tortilla chips on a large baking sheet in a single, even layer.
- Drizzle with olive oil and toss gently to coat.
- In a small bowl, mix chili powder, garlic powder, onion powder, paprika, and salt. Sprinkle evenly over chips.
- Top with shredded cheddar cheese, letting some fall between the chips.
- Bake for 7–10 minutes, until cheese is melted and bubbling, and chips are golden at the edges.
- Cool for a few minutes before serving to let the cheese set slightly.
Notes
- Add sliced jalapeños before baking for extra heat.
- Use Monterey Jack or pepper jack cheese for a twist.
- Garnish with cilantro, sour cream, or green onions after baking.
- To make ahead, prep chips with seasoning and cheese, freeze in a single layer, and bake directly from frozen.
