Description

This Chili Cheese Potato Skillet is a hearty and flavorful dish combining crispy air-fried potatoes with a spicy, savory chili beef mixture, topped with melted cheddar cheese. Perfect for a comforting weeknight meal, it brings together tender potatoes, seasoned ground beef, beans, and a kick of green chiles, finished with fresh green onions, sour cream, and jalapeño slices.


Ingredients

Potatoes

  • 5 small to medium potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika

Beef Mixture

  • 450 grams ground beef
  • 1 onion, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 2 teaspoons chili powder
  • 1 tablespoon minced garlic
  • 280 grams diced tomatoes and green chiles, drained
  • 440 grams chili beans, drained

Finish & Garnish

  • 170 grams shredded cheddar cheese
  • 2 green onions, chopped
  • Sour cream, to serve
  • Sliced jalapeños, to serve


Instructions

  1. Prepare Potatoes: Peel, wash, and dice the potatoes into cubes. In a large mixing bowl, toss the potatoes with olive oil, salt, pepper, garlic powder, and paprika until they are evenly coated to ensure a flavorful and crispy texture.
  2. Air Fry Potatoes: Arrange the seasoned potatoes in a single layer in the air fryer basket. Cook them at 200°C (approximately 390°F) for 25 minutes, shaking the basket halfway through to promote even cooking, until golden brown and crisp.
  3. Cook Beef and Onions: While the potatoes cook, heat a large skillet over medium-high heat. Add ground beef and chopped onion, cooking until the beef is fully browned and the onion is softened. Break up the meat as it cooks and drain any excess fat once done.
  4. Season Beef Mixture: Add salt, black pepper, onion powder, paprika, and chili powder to the skillet with the beef. Stir in minced garlic, the drained diced tomatoes with green chiles, and drained chili beans. Reduce heat to low and simmer for 5 minutes, allowing the flavors to meld together.
  5. Combine Potatoes and Beef: Fold the crisp air-fried potatoes gently into the beef and bean mixture in the skillet, combining everything evenly.
  6. Add Cheese and Melt: Spread the shredded cheddar cheese evenly over the top of the skillet mixture. Transfer the whole skillet to a preheated oven at 200°C (390°F) and bake for 3 to 5 minutes until the cheese is fully melted and bubbly.
  7. Garnish and Serve: Remove the skillet from the oven carefully. Sprinkle with chopped green onions, then serve immediately with dollops of sour cream and sliced jalapeños on the side for extra flavor and heat.

Notes

  • You can use russet or Yukon gold potatoes for the best texture when air frying.
  • If you don’t have an air fryer, you can roast the potatoes in the oven at 220°C (430°F) for about 30 minutes until crispy.
  • Adjust chili powder and jalapeños to your preferred spice level.
