Description

A quick and flavorful Chicken Zucchini Stir Fry combining tender chicken breast with fresh zucchini, garlic, and a savory-sweet sauce made from soy, oyster sauce, and honey. Perfect for a healthy weeknight dinner ready in just 20 minutes.

Ingredients

Protein

  • 2 chicken breasts, sliced

Vegetables

  • 2 zucchinis, sliced
  • 2 cloves garlic, minced

Sauces and Oils

  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon honey

Spices

  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Cook the Chicken: Heat olive oil in a large skillet or wok over medium-high heat. Add the sliced chicken and cook for 5-6 minutes, stirring occasionally, until the chicken is browned and fully cooked through.
  2. Add Vegetables: Add the minced garlic and sliced zucchini to the skillet with the chicken. Continue cooking for 3-4 minutes, stirring frequently until the zucchini becomes tender but still slightly crisp.
  3. Make the Sauce: Stir in the soy sauce, oyster sauce, honey, and red pepper flakes if using. Cook for another 2-3 minutes, allowing the sauce to thicken and coat the chicken and vegetables evenly.
  4. Season and Serve: Taste and adjust seasoning with salt and pepper as needed. Serve the stir fry hot, ideally over steamed rice or noodles for a complete meal.

Notes

  • For added crunch, you can toss in some sliced bell peppers or snap peas along with the zucchini.
  • To make this dish gluten-free, use gluten-free soy sauce and oyster sauce alternatives.
  • The red pepper flakes are optional; omit or adjust to control the spice level.
  • This recipe is great for meal prep and reheats well.
  • Serve it over rice, quinoa, or noodles for a complete and satisfying meal.
