Ingredients

For the Sweet Potato Fries:

  • 2 medium sweet potatoes (cut into fries)
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste

For the Avocado Salsa:

  • 1 ripe avocado (diced)
  • 1 small tomato (diced)
  • 2 tablespoons red onion (finely chopped)
  • 1 tablespoon fresh cilantro (chopped)
  • 1 tablespoon lime juice

Instructions

  1. Prepare the Sweet Potato Fries: Preheat oven to 425°F (218°C). Toss sweet potato fries with olive oil, paprika, garlic powder, salt, and pepper. Bake for 25–30 minutes, flipping halfway through.
  2. Cook the Chicken: Season chicken with salt and pepper. Cook in olive oil over medium heat for 6–7 minutes per side. Let rest and slice.
  3. Make the Avocado Salsa: Mix avocado, tomato, red onion, cilantro, and lime juice in a bowl.
  4. Serve: Plate sliced chicken with sweet potato fries and avocado salsa.
