Ingredients
For the Sweet Potato Fries:
- 2 medium sweet potatoes (cut into fries)
- 1 tablespoon olive oil

- ½ teaspoon salt
- ¼ teaspoon black pepper
For the Chicken:
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper to taste
For the Avocado Salsa:
- 1 ripe avocado (diced)
- 1 small tomato (diced)
- 2 tablespoons red onion (finely chopped)
- 1 tablespoon fresh cilantro (chopped)
- 1 tablespoon lime juice
Instructions
- Prepare the Sweet Potato Fries: Preheat oven to 425°F (218°C). Toss sweet potato fries with olive oil, paprika, garlic powder, salt, and pepper. Bake for 25–30 minutes, flipping halfway through.
- Cook the Chicken: Season chicken with salt and pepper. Cook in olive oil over medium heat for 6–7 minutes per side. Let rest and slice.
- Make the Avocado Salsa: Mix avocado, tomato, red onion, cilantro, and lime juice in a bowl.
- Serve: Plate sliced chicken with sweet potato fries and avocado salsa.
