  • 8 oz cremini or white mushrooms, sliced
  • 2 garlic cloves, minced

Instructions

  1. Season and Cook Chicken: Season the chicken breasts evenly with salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5–6 minutes per side until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
  2. Sauté Mushrooms: Reduce the heat to medium and add the butter to the same skillet. Once melted, add the sliced mushrooms and sauté for 5–7 minutes until they become browned and tender.

  4. Deglaze and Simmer: Pour the chicken broth into the skillet, scraping up any browned bits stuck to the pan. Let it simmer for 2–3 minutes to reduce slightly.
  5. Make the Cream Sauce: Stir in the heavy cream, Dijon mustard, and grated Parmesan cheese. Continue to cook for another 3–4 minutes until the sauce thickens slightly and becomes creamy.
  6. Combine Chicken and Sauce: Return the cooked chicken breasts to the skillet. Spoon the mushroom sauce over the chicken and let it simmer for 2–3 minutes until heated through.
