Ingredients
Chicken
- 4 boneless, skinless chicken breasts
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Mushroom Sauce
- 2 tablespoons unsalted butter
- 8 oz cremini or white mushrooms, sliced
- 2 garlic cloves, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1 teaspoon Dijon mustard
- 1/4 cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Season and Cook Chicken: Season the chicken breasts evenly with salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5–6 minutes per side until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Sauté Mushrooms: Reduce the heat to medium and add the butter to the same skillet. Once melted, add the sliced mushrooms and sauté for 5–7 minutes until they become browned and tender.
- Add Garlic: Stir in the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
- Deglaze and Simmer: Pour the chicken broth into the skillet, scraping up any browned bits stuck to the pan. Let it simmer for 2–3 minutes to reduce slightly.
- Make the Cream Sauce: Stir in the heavy cream, Dijon mustard, and grated Parmesan cheese. Continue to cook for another 3–4 minutes until the sauce thickens slightly and becomes creamy.
- Combine Chicken and Sauce: Return the cooked chicken breasts to the skillet. Spoon the mushroom sauce over the chicken and let it simmer for 2–3 minutes until heated through.
- Garnish and Serve: Garnish with chopped fresh parsley if desired. Serve immediately with your choice of mashed potatoes, rice, or pasta to soak up the delicious sauce.
Notes
- Serve with mashed potatoes, rice, or pasta for a complete meal that soaks up the sauce nicely.
- You can substitute chicken thighs in place of breasts for a juicier result.
- For a tangier flavor, try using sour cream instead of heavy cream in the sauce.
