Description

These Chicken Tzatziki Bowls are a delicious Mediterranean-inspired meal featuring marinated chicken, fresh veggies, feta cheese, and a creamy tzatziki sauce. Perfect for a healthy and flavorful dinner option.


Ingredients

For the Chicken:

  • 2 boneless, skinless chicken breasts, cut into strips
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 teaspoons dried oregano
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Bowls:

  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup Kalamata olives, sliced

For the Tzatziki Sauce:

  • 1/2 cup plain Greek yogurt
  • 1/4 cup cucumber, finely grated and squeezed dry
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon fresh dill (or 1/4 teaspoon dried)
  • Salt and pepper to taste

Instructions

  1. Marinate the Chicken: In a bowl, toss the chicken with olive oil, lemon juice, oregano, garlic, salt, and pepper. Marinate for at least 15 minutes.
  2. Make the Tzatziki: Mix all sauce ingredients in a small bowl until combined. Refrigerate until ready to serve.
  3. Cook the Chicken: Heat a skillet over medium-high heat and cook the marinated chicken for 6–8 minutes, turning until golden and cooked through.
  4. Assemble the Bowls: Divide the rice or quinoa among 4 bowls. Top with chicken, cherry tomatoes, cucumber, red onion, feta, and olives. Drizzle with tzatziki sauce and serve immediately.

Notes

  • For extra flavor, grill the chicken instead of pan-cooking.
  • You can substitute brown rice, cauliflower rice, or couscous depending on your preference.
