Ingredients
For the Chicken:
- 2 boneless, skinless chicken breasts, cut into strips
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 2 teaspoons dried oregano
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Bowls:
- 2 cups cooked rice or quinoa
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup Kalamata olives, sliced
For the Tzatziki Sauce:
- 1/2 cup plain Greek yogurt
- 1/4 cup cucumber, finely grated and squeezed dry
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1 teaspoon fresh dill (or 1/4 teaspoon dried)
- Salt and pepper to taste
Instructions
- Marinate the Chicken: In a bowl, toss the chicken with olive oil, lemon juice, oregano, garlic, salt, and pepper. Marinate for at least 15 minutes.
- Make the Tzatziki: Mix all sauce ingredients in a small bowl until combined. Refrigerate until ready to serve.
- Cook the Chicken: Heat a skillet over medium-high heat and cook the marinated chicken for 6–8 minutes, turning until golden and cooked through.
- Assemble the Bowls: Divide the rice or quinoa among 4 bowls. Top with chicken, cherry tomatoes, cucumber, red onion, feta, and olives. Drizzle with tzatziki sauce and serve immediately.
Notes
- For extra flavor, grill the chicken instead of pan-cooking.
- You can substitute brown rice, cauliflower rice, or couscous depending on your preference.
