Description

This bold, flavor-packed Chicken Thigh Marinade transforms everyday thighs into juicy, caramelized masterpieces—perfect for grilling, baking, or roasting.


Ingredients

  • 2 lbs chicken thighs (bone-in or boneless)
  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • Salt to taste (optional)


Instructions

  1. In a bowl or zip-top bag, combine olive oil, soy sauce, lemon juice, honey, garlic, paprika, oregano, and black pepper. Mix well.
  2. Add chicken thighs and ensure they are well coated. Marinate in the refrigerator for at least 30 minutes, ideally 2–8 hours.
  3. When ready to cook, remove chicken from marinade and shake off excess.
  4. Grill over medium-high heat for 6–7 minutes per side, or bake at 425°F for 25–30 minutes until internal temperature reaches 165°F.
  5. Let chicken rest for 5 minutes before serving. Garnish as desired and enjoy.

Notes

  • Reserve a portion of the marinade (before adding raw chicken) if you’d like to use it as a sauce—boil it before serving.
  • Excellent with pita, salads, grain bowls, or tacos.
  • For meal prep, freeze raw chicken in marinade for up to 3 months.
