Ingredients
- 2 lbs chicken thighs (bone-in or boneless)
- 1/4 cup olive oil
- 1/4 cup soy sauce
- 2 tbsp lemon juice
- 1 tbsp honey
- 3 cloves garlic, minced
- 1 tsp paprika
- 1 tsp dried oregano
- 1/2 tsp black pepper
- Salt to taste (optional)
Instructions
- In a bowl or zip-top bag, combine olive oil, soy sauce, lemon juice, honey, garlic, paprika, oregano, and black pepper. Mix well.
- Add chicken thighs and ensure they are well coated. Marinate in the refrigerator for at least 30 minutes, ideally 2–8 hours.
- When ready to cook, remove chicken from marinade and shake off excess.
- Grill over medium-high heat for 6–7 minutes per side, or bake at 425°F for 25–30 minutes until internal temperature reaches 165°F.
- Let chicken rest for 5 minutes before serving. Garnish as desired and enjoy.
Notes
- Reserve a portion of the marinade (before adding raw chicken) if you’d like to use it as a sauce—boil it before serving.
- Excellent with pita, salads, grain bowls, or tacos.
- For meal prep, freeze raw chicken in marinade for up to 3 months.
