Description

Ingredients

Chicken Souvlaki:

  • 1 1/2 pounds boneless, skinless chicken breast (cut into 1-inch cubes)
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 2 garlic cloves (minced)
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • wooden skewers (soaked in water if grilling)


Instructions

  1. Marinate the Chicken: In a large bowl or resealable bag, combine olive oil, lemon juice, garlic, red wine vinegar, oregano, salt, and pepper. Add the chicken pieces and toss to coat. Marinate in the refrigerator for at least 30 minutes, preferably 2–4 hours.
  2. Preheat the Grill: Preheat a grill or grill pan over medium-high heat.
  3. Skewer and Grill: Thread the marinated chicken onto skewers. Grill the skewers for 10–12 minutes, turning occasionally, until the chicken is fully cooked and has nice char marks.
  4. Rest and Serve: Remove from grill and let rest for 2–3 minutes before serving.

Notes

  • Serve with warm pita, tzatziki sauce, and a side of cucumber-tomato salad for a full Greek meal.
  • For added flavor, marinate overnight.
