Instructions
- Boil Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.
- Heat Olive Oil: In a large skillet over medium heat, add olive oil and let it warm for about one minute.
- Cook Sausages: Add sliced chicken sausages to the skillet and sauté for 5-7 minutes, or until they are browned and cooked through. Remove the sausages from the pan and set aside.
- Sauté Zucchini: Using the same skillet, add diced zucchini and sauté for 3-4 minutes until slightly softened.
- Add Garlic and Tomatoes: Add minced garlic and halved cherry tomatoes to the pan. Continue sautéing for 3-5 minutes until the tomatoes begin to release their juices.
- Season the Mixture: Sprinkle in dried oregano and dried basil. Season with salt and pepper to taste, then stir to combine all the flavors well.
- Combine with Pasta and Sausages: Return the cooked pasta and chicken sausages to the skillet. Toss everything together, ensuring the pasta is evenly coated with the flavorful mixture.
- Heat Through: Allow the entire mixture to heat through for 2-3 minutes while stirring occasionally to blend the flavors.
- Garnish and Serve: Remove from heat. Garnish with fresh chopped parsley and optionally sprinkle grated Parmesan cheese on top before serving for an extra savory touch.
