Ingredients
- 2 ripe avocados, halved and pitted
- 2 cups cooked chicken breast, shredded or chopped
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1/4 cup red onion, finely chopped
- 1/4 cup celery, finely chopped
- 1 tablespoon fresh lemon juice
- Salt and pepper to taste
- Fresh parsley or chives for garnish (optional)
Instructions
- In a medium bowl, combine the shredded chicken, mayonnaise, Dijon mustard, red onion, celery, and lemon juice.
- Mix well until all ingredients are evenly coated and combined.
- Season the chicken salad with salt and pepper to taste.
- Scoop a generous amount of chicken salad into each avocado half.
- Garnish with chopped parsley or chives if desired.
- Serve immediately or chill for 15-20 minutes before serving.
