Description

A flavorful and aromatic Chicken Provençal recipe cooked with juicy tomatoes, olives, and herbes de Provence. This French-inspired dish is hearty and perfect for a satisfying meal.


Ingredients

Chicken:

  • 4 bone-in, skin-on chicken thighs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Other Ingredients:

  • 2 tablespoons olive oil
  • 1 small yellow onion, thinly sliced
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1 (14.5-ounce) can diced tomatoes with juice
  • 1/2 cup pitted Kalamata olives
  • 1/2 cup cherry tomatoes, halved
  • 2 teaspoons herbes de Provence
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1 tablespoon capers (optional)
  • fresh parsley for garnish (optional)


Instructions

  1. Season the chicken thighs: Rub salt and pepper on both sides of the chicken thighs.
  2. Sear the chicken: Heat olive oil in a skillet, sear the chicken until golden brown, then set aside.
  3. Sauté onion and garlic: In the same pan, cook onion until softened, then add garlic.
  4. Deglaze and add ingredients: Deglaze with wine, add tomatoes, olives, cherry tomatoes, herbes de Provence, red pepper flakes, and capers if using.
  5. Simmer: Return chicken to the pan, cover, and simmer for 30–35 minutes until chicken is tender.
  6. Garnish and serve: Garnish with parsley before serving.

Notes

  • Serve with crusty bread, mashed potatoes, or rice.
  • You can use boneless thighs or drumsticks.
  • Flavors develop more the next day.
