A flavorful and aromatic Chicken Provençal recipe cooked with juicy tomatoes, olives, and herbes de Provence. This French-inspired dish is hearty and perfect for a satisfying meal.
Ingredients
Chicken:
- 4 bone-in, skin-on chicken thighs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Other Ingredients:
- 2 tablespoons olive oil
- 1 small yellow onion, thinly sliced
- 4 cloves garlic, minced
- 1/2 cup dry white wine
- 1 (14.5-ounce) can diced tomatoes with juice
- 1/2 cup pitted Kalamata olives
- 1/2 cup cherry tomatoes, halved
- 2 teaspoons herbes de Provence
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1 tablespoon capers (optional)
- fresh parsley for garnish (optional)
Instructions
- Season the chicken thighs: Rub salt and pepper on both sides of the chicken thighs.
- Sear the chicken: Heat olive oil in a skillet, sear the chicken until golden brown, then set aside.
- Sauté onion and garlic: In the same pan, cook onion until softened, then add garlic.
- Deglaze and add ingredients: Deglaze with wine, add tomatoes, olives, cherry tomatoes, herbes de Provence, red pepper flakes, and capers if using.
- Simmer: Return chicken to the pan, cover, and simmer for 30–35 minutes until chicken is tender.
- Garnish and serve: Garnish with parsley before serving.
Notes
- Serve with crusty bread, mashed potatoes, or rice.
- You can use boneless thighs or drumsticks.
- Flavors develop more the next day.
