Description

Chicken Pomodoro is a classic Italian dish featuring tender chicken breasts simmered in a flavorful tomato and basil sauce. This quick and easy stovetop recipe is perfect for a delicious weeknight dinner.

Ingredients

Ingredients for Chicken Pomodoro:

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 pint cherry tomatoes, halved
  • ½ teaspoon red pepper flakes (optional)
  • ½ cup chicken broth
  • ¼ cup fresh basil leaves, chopped
  • 2 tablespoons grated Parmesan cheese (optional)

Instructions

  1. Season the chicken: Season the chicken breasts with salt, pepper, and garlic powder.
  2. Sear the chicken: Heat olive oil in a skillet and sear the chicken until golden brown and cooked through.
  3. Cook the tomatoes: In the same skillet, sauté garlic, cherry tomatoes, and red pepper flakes until tomatoes soften.
  4. Simmer: Add chicken broth, simmer, then return chicken to the skillet and simmer to blend flavors.
  5. Finish and serve: Sprinkle with basil and Parmesan cheese before serving.

Notes

  • Serve over angel hair pasta, rice, or roasted vegetables.
  • Chicken thighs can be used for a juicier alternative.
