Ingredients
Chicken and Vegetables
- 1 pound boneless, skinless chicken breasts, sliced into thin strips
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, sliced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ÂĽ teaspoon black pepper

- 1½ cups shredded Mexican blend cheese
- 4 large flour tortillas

Instructions
- Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the sliced chicken strips and season with chili powder, cumin, paprika, garlic powder, salt, and black pepper. Cook for 5 to 6 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
- Sauté the Vegetables: In the same skillet, add the sliced red and green bell peppers along with the onion. Sauté for 4 to 5 minutes until the vegetables are tender and slightly charred. Return the cooked chicken to the skillet and stir to combine with the sautéed vegetables.
- Prepare the Quesadillas: Wipe the skillet clean or use a second skillet and heat it over medium heat. Place one flour tortilla in the skillet. Sprinkle one-quarter of the shredded Mexican blend cheese onto one half of the tortilla. Top with a portion of the chicken fajita mixture, then fold the tortilla over to cover the filling.
- Cook the Quesadillas: Cook each quesadilla for 2 to 3 minutes per side, or until the tortilla is golden brown and the cheese inside has melted. Repeat this process with the remaining tortillas and filling.
- Serve: Slice the cooked quesadillas into wedges and serve warm with optional toppings such as sour cream, salsa, or guacamole for added flavor.
