Description

Ingredients

Chicken and Vegetables

  • 1 pound boneless, skinless chicken breasts, sliced into thin strips
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ÂĽ teaspoon black pepper

Cheese and Tortillas

  • 1½ cups shredded Mexican blend cheese
  • 4 large flour tortillas

Instructions

  1. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the sliced chicken strips and season with chili powder, cumin, paprika, garlic powder, salt, and black pepper. Cook for 5 to 6 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
  2. Sauté the Vegetables: In the same skillet, add the sliced red and green bell peppers along with the onion. Sauté for 4 to 5 minutes until the vegetables are tender and slightly charred. Return the cooked chicken to the skillet and stir to combine with the sautéed vegetables.
  3. Prepare the Quesadillas: Wipe the skillet clean or use a second skillet and heat it over medium heat. Place one flour tortilla in the skillet. Sprinkle one-quarter of the shredded Mexican blend cheese onto one half of the tortilla. Top with a portion of the chicken fajita mixture, then fold the tortilla over to cover the filling.
  4. Cook the Quesadillas: Cook each quesadilla for 2 to 3 minutes per side, or until the tortilla is golden brown and the cheese inside has melted. Repeat this process with the remaining tortillas and filling.
  5. Serve: Slice the cooked quesadillas into wedges and serve warm with optional toppings such as sour cream, salsa, or guacamole for added flavor.
