These Chicken Fajita Melts are a delicious twist on classic fajitas, with seasoned chicken, bell peppers, onions, and melted cheese piled onto toasted sandwich rolls. Perfect for a quick and satisfying dinner!
Ingredients
Chicken Fajita Mixture:
- 1 lb boneless, skinless chicken breasts, thinly sliced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 small red onion, thinly sliced
Additional Ingredients:
- 4 sandwich rolls or hoagie buns, split
- 1 1/2 cups shredded pepper jack or cheddar cheese
- 2 tablespoons mayonnaise (optional)
Instructions
- Cook the Chicken: In a large skillet, heat olive oil over medium-high heat. Add chicken and season with chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Cook for 5–6 minutes until cooked through and browned. Set aside.
- Sauté Veggies: In the same skillet, sauté bell peppers and onion for 4–5 minutes until tender and charred.
- Combine and Toast: Return chicken to the skillet with veggies. Toast sandwich rolls under the broiler, then spread with mayonnaise. Divide chicken mixture on rolls, top with cheese, and broil until melted.
- Serve: Serve hot and enjoy!

- Add sliced jalapeños or hot sauce for extra heat.
