Chicken Diane:
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter (divided)
- 1 small shallot (finely minced)
- 2 garlic cloves (minced)
- 1/4 cup dry white wine or chicken broth
- 1 tablespoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- 1/4 cup heavy cream
- 1 tablespoon fresh parsley (chopped)
- Salt and pepper to taste
Instructions
- Pound the chicken: Pound the chicken breasts to an even thickness and season with salt and pepper.
- Cook the chicken: Heat olive oil and 1 tablespoon butter in a skillet. Cook chicken until golden brown.
