  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ¼ cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup milk
  • 1 cup heavy cream
  • 2 cups cooked chicken, shredded or diced
  • 1 cup diced ham
  • 1 ½ cups shredded Swiss cheese
  • 1 tsp Dijon mustard
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp paprika
  • Chopped parsley, for garnish


Instructions

  1. In a large pot or Dutch oven, heat the butter and olive oil over medium heat. Add the onion and cook for 3–4 minutes until soft and translucent.
  2. Stir in the garlic and cook for 1 more minute.
  3. Sprinkle the flour over the mixture and stir continuously for 1–2 minutes to form a roux.
  4. Gradually whisk in the chicken broth, ensuring there are no lumps.
  5. Stir in the milk and heavy cream, and bring to a gentle simmer.
  6. Add the chicken, ham, mustard, salt, pepper, and paprika.
  7. Simmer for 10–15 minutes, stirring occasionally, until thickened and heated through.
  8. Stir in the shredded Swiss cheese until melted and smooth.
  9. Taste and adjust seasoning as needed.
  10. Serve hot, garnished with chopped parsley and extra cheese if desired.
