Ingredients
For the Soup:
- 2 tbsp unsalted butter
 - 1 tbsp olive oil
 - 1 small onion, finely chopped
 - 2 cloves garlic, minced
 - ¼ cup all-purpose flour
 - 4 cups chicken broth
 - 1 cup milk
 - 1 cup heavy cream
 - 2 cups cooked chicken, shredded or diced
 - 1 cup diced ham
 - 1 ½ cups shredded Swiss cheese
 - 1 tsp Dijon mustard
 - ½ tsp salt
 - ¼ tsp black pepper
 - ¼ tsp paprika
 - Chopped parsley, for garnish
 
Instructions
- In a large pot or Dutch oven, heat the butter and olive oil over medium heat. Add the onion and cook for 3–4 minutes until soft and translucent.
 - Stir in the garlic and cook for 1 more minute.
 - Sprinkle the flour over the mixture and stir continuously for 1–2 minutes to form a roux.
 - Gradually whisk in the chicken broth, ensuring there are no lumps.
 - Stir in the milk and heavy cream, and bring to a gentle simmer.
 - Add the chicken, ham, mustard, salt, pepper, and paprika.
 - Simmer for 10–15 minutes, stirring occasionally, until thickened and heated through.
 - Stir in the shredded Swiss cheese until melted and smooth.
 - Taste and adjust seasoning as needed.
 - Serve hot, garnished with chopped parsley and extra cheese if desired.

- To save time, use rotisserie chicken and pre-cooked ham.
