Ingredients
Meatloaf:
- 2 pounds ground chicken
- 1 cup breadcrumbs
- 1/2 cup milk
- 2 large eggs
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Fillings:
- 1 1/2 cups diced ham
- 1 1/2 cups shredded Swiss cheese (divided)
Optional Garnish:
- 2 tablespoons chopped parsley
Instructions
- Preheat Oven: Preheat oven to 375°F (190°C) and prepare a loaf pan with parchment paper or grease.
- Mix Meatloaf: In a large bowl, combine ground chicken, breadcrumbs, milk, eggs, Dijon mustard, garlic powder, onion powder, salt, and pepper. Mix until combined.
- Add Fillings: Stir in diced ham and 1 cup of Swiss cheese. Transfer mixture to the loaf pan and shape into a loaf.
- Top and Bake: Sprinkle remaining 1/2 cup of cheese on top of the loaf. Bake for 55–65 minutes until cooked through and cheese is golden.
- Rest and Serve: Let the meatloaf rest for 10 minutes before slicing. Garnish with parsley if desired and serve warm.
