For the Chicken
- 1 lb boneless, skinless chicken breasts (thinly sliced or shaved)
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon garlic powder
For the Vegetables
- 1 medium yellow onion (thinly sliced)
- 1 bell pepper (green, red, or yellow, thinly sliced)
For Assembly
- 4 hoagie rolls or sub rolls (split and lightly toasted)
- 8 slices provolone cheese (or American or mozzarella)
- Optional: mayonnaise, hot sauce, or ketchup, for serving
Instructions
- Prep Ingredients: Thinly slice the chicken breasts, onion, and bell pepper. Have all ingredients measured and within reach before cooking.
- Cook the Vegetables: Heat half the olive oil in a large skillet over medium-high heat. Add the sliced onions and bell peppers. Sauté for 3-4 minutes until softened and just starting to caramelize. Remove to a plate and set aside.
- Cook the Chicken: Add remaining olive oil to the pan, then add the sliced chicken, salt, pepper, and garlic powder. Cook, stirring frequently, for 5-6 minutes or until the chicken is cooked through and slightly golden.
- Combine & Melt Cheese: Return the sautéed onions and peppers to the skillet with the chicken. Toss everything together. Arrange the mixture in four piles in the pan and top each with two slices of cheese. Let the cheese melt for about 1 minute.
- Assemble Sandwiches: Using a spatula, scoop each cheesy chicken mixture onto a toasted hoagie roll. Serve immediately, adding mayonnaise or condiments of your choice.
