Ingredients
Lettuce Wrap
- 1 head iceberg lettuce
- ½ cup shaved Parmesan cheese, divided
- ½ cup croutons
- 1 cooked skin-on chicken breast, sliced (rotisserie chicken preferred)
- 1 Roma tomato, thinly sliced
Caesar Dressing
- ⅔ cup Caesar dressing (see recipe below)
- 3 tablespoons mayonnaise
- 2 tablespoons shaved Parmesan cheese
- 2 teaspoons olive oil
- 2 teaspoons water
- 1 clove garlic
- 1 teaspoon Worcestershire sauce
- ½ teaspoon Dijon mustard
- ½ teaspoon freshly cracked black pepper
- ¼ teaspoon kosher salt
Instructions
- Prepare the Lettuce Cups: Remove the core and root end from the iceberg lettuce. Gently separate the lettuce leaves under cold running water, and select the outer leaves to create 2 large lettuce cups. Pat dry for assembly.
- Make the Caesar Dressing: Combine the mayonnaise, shaved Parmesan cheese, olive oil, water, garlic, Worcestershire sauce, Dijon mustard, black pepper, and kosher salt in a container. Use an immersion blender to blend all ingredients until smooth and creamy.
- Assemble the Wraps: Place one iceberg lettuce cup on a piece of parchment paper. Lightly sprinkle with salt, then layer half of the shaved Parmesan cheese, croutons, sliced chicken breast, and a generous amount of Caesar dressing. Add the thinly sliced Roma tomato on top, followed by the remaining dressing and Parmesan cheese.
- Roll and Secure: Roll the lettuce wrap tightly, using the parchment paper to help keep its shape. Wrap the rolled lettuce tightly in plastic wrap to secure the shape. Once wrapped, cut the wrap in half. Remove the plastic and parchment before serving.
Notes
- Rotisserie chicken is recommended for convenience, but grilled or baked chicken breast can also be used.
- Use fresh and crisp iceberg lettuce leaves to prevent wilting during rolling.
- The homemade Caesar dressing can be stored in the refrigerator for up to 3 days.
- For a lower calorie option, reduce or omit the croutons.
