Description

This Chicken Caesar Pasta Salad Recipe combines classic Caesar salad flavors with pasta and chicken for a satisfying and flavorful meal. Perfect for a quick and delicious lunch or dinner.

Ingredients

Pasta:

  • 8 ounces rotini or penne pasta

Chicken:

  • 2 cups cooked chicken breast, chopped

Salad:

  • 2 cups chopped romaine lettuce
  • ½ cup cherry tomatoes, halved
  • ¼ cup grated Parmesan cheese
  • ½ cup croutons

Dressing:

  • ½ cup Caesar dressing (store-bought or homemade)
  • 1 tablespoon olive oil
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder

Optional:

  • Extra Caesar dressing for drizzling

Instructions

  1. Cook the Pasta: Cook the pasta according to package directions until al dente. Drain, rinse under cold water, and set aside to cool.
  2. Saute Chicken: In a skillet, heat olive oil over medium heat. Season the cooked chicken with garlic powder and black pepper. Saute for added flavor.
  3. Combine Ingredients: In a large mixing bowl, combine the cooled pasta, chopped chicken, romaine lettuce, cherry tomatoes, and Parmesan cheese. Pour in the Caesar dressing and toss together until well coated.
  4. Add Crunch: Just before serving, stir in the croutons. Drizzle with extra dressing if desired and serve chilled or at room temperature.

Notes

  • Grilled or rotisserie chicken works great in this recipe.
  • Add bacon bits or sliced avocado for extra flavor.
  • To make it vegetarian, omit the chicken and add chickpeas or roasted vegetables.
