A classic Italian dish, Chicken Cacciatore is a hearty and flavorful braised chicken stew cooked with tomatoes, bell peppers, olives, and capers. This rustic dish is perfect for a cozy dinner with the family.
Ingredients
Chicken Cacciatore:
- 4 bone-in, skin-on chicken thighs
- 1 tablespoon olive oil
- 1 small onion (sliced)
- 1 red bell pepper (sliced)
- 1 green bell pepper (sliced)
- 2 cloves garlic (minced)
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup dry white wine
- 1 (14-ounce) can crushed tomatoes
- 1/2 cup chicken broth
- 1/4 cup pitted black olives
- 2 tablespoons capers (rinsed)
- Salt and black pepper to taste
- Chopped fresh parsley (for garnish, optional)
Instructions
- Season the chicken: Season the chicken thighs with salt and pepper.
- Sear the chicken: Heat olive oil in a large skillet or Dutch oven. Sear the chicken until browned, about 5–6 minutes per side. Transfer chicken to a plate.
- Sauté vegetables: In the same pan, sauté onion and bell peppers until softened, about 5 minutes. Add garlic, oregano, thyme, and red pepper flakes, and cook for another minute.
- Deglaze and simmer: Deglaze the pan with white wine, then stir in crushed tomatoes, chicken broth, olives, and capers. Return chicken to the pan, simmer covered for 30–35 minutes, then uncover and simmer for an additional 5–10 minutes to thicken the sauce.
- Serve: Garnish with parsley before serving.

- Serve over pasta, polenta, or crusty bread for a hearty meal.
- You can use boneless chicken thighs or breasts if preferred, but adjust cooking time accordingly.
