Description

These Chicken Burrito Bowls are a flavorful and nutritious meal featuring seasoned chicken, rice, black beans, fresh vegetables, and a creamy avocado topping. Perfect for meal prep or a quick weeknight dinner, they offer a balanced combination of protein, fiber, and healthy fats with a Mexican-inspired flair.

Ingredients

Protein

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon taco seasoning

Base

  • 1 cup uncooked white or brown rice

Veggies & Beans

  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 cup cherry tomatoes, halved
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro

Other

  • 2 tablespoons olive oil
  • 1 avocado, diced
  • Juice of 1 lime
  • Salt and pepper to taste

Optional Toppings

  • Shredded cheese
  • Sour cream
  • Salsa
  • Jalapeños

Instructions

  1. Cook the rice: Prepare the white or brown rice according to the package instructions. Once cooked, set it aside to keep warm while you prepare the other ingredients.
  2. Season the chicken: In a medium bowl, toss the chicken breasts with olive oil and taco seasoning to coat them evenly, ensuring the chicken is well flavored.
  3. Cook the chicken: Heat a skillet over medium-high heat. Place the chicken breasts in the skillet and cook for 5 to 6 minutes per side or until they are fully cooked through and no longer pink in the center. Remove from heat and let the chicken rest for a few minutes.
  4. Prepare the avocado topping: In a small bowl, combine the diced avocado, chopped red onion, lime juice, and a pinch of salt. Mix gently to create a fresh, guacamole-style topping.
  5. Slice the chicken: After resting, slice or dice the cooked chicken breasts into bite-sized pieces for easy serving.
  6. Assemble the bowls: Divide the cooked rice evenly among four bowls. Top each bowl with the sliced chicken, black beans, corn kernels, cherry tomatoes, the avocado mixture, and a sprinkle of chopped cilantro.
  7. Add optional toppings: If desired, add shredded cheese, sour cream, salsa, or jalapeños to customize each bowl to taste.
  8. Serve: Serve the burrito bowls immediately while fresh and enjoy your balanced, tasty meal.

Notes

  • Use rotisserie chicken as a convenient shortcut to save cooking time.
  • For a low-carb variation, substitute the rice with cauliflower rice.
  • Add a drizzle of chipotle mayo or hot sauce to enhance the flavor and add some heat.
