Ingredients

Chicken Marinade

Instructions

  1. Prepare the chicken marinade: In a bowl, combine olive oil, lime juice, paprika, cumin, chili powder, garlic powder, onion powder, dried oregano, salt, and pepper. Mix thoroughly to create the marinade.
  2. Marinate the chicken: Add the boneless, skinless chicken breasts to the marinade and coat them evenly. Let the chicken marinate for at least 30 minutes, preferably up to 2 hours, to absorb the flavors.
  3. Cook the chicken: Grill or pan-sear the marinated chicken over medium heat, cooking for 6–8 minutes on each side until fully cooked through. Once done, let the chicken rest to retain juices, then slice thinly.
  4. Assemble the bowl base: Divide the cooked brown rice and mixed greens evenly between serving bowls as the base layers.
