Creamy and comforting, this Chicken Broccoli Rice Casserole is a satisfying one-dish meal that the whole family will love. Tender chicken, fluffy rice, and crisp broccoli are baked in a cheesy sauce until bubbly and golden brown.


Ingredients

For the Casserole:

  • 2 cups cooked white rice
  • 2 cups cooked and shredded chicken breast
  • 2 cups chopped broccoli florets (steamed)
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese (plus more for topping)
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste

For the Topping:

  • 1/4 cup grated Parmesan cheese
  • 1/2 cup crushed Ritz crackers or breadcrumbs (optional)
  • 2 tablespoons melted butter (if using topping)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Mix Ingredients: In a large mixing bowl, combine rice, chicken, broccoli, cream of chicken soup, sour cream, cheddar cheese, milk, garlic powder, onion powder, salt, and pepper.
  3. Spread Mixture: Spread the mixture into a greased 9×13-inch baking dish.
  4. Add Toppings: If using, mix crushed crackers or breadcrumbs with melted butter and sprinkle over the casserole. Top with additional cheddar and Parmesan cheese.
