Ingredients
For the Casserole:
- 2 cups cooked white rice
- 2 cups cooked and shredded chicken breast
- 2 cups chopped broccoli florets (steamed)
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese (plus more for topping)
- 1/2 cup milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper to taste
For the Topping:
- 1/4 cup grated Parmesan cheese
- 1/2 cup crushed Ritz crackers or breadcrumbs (optional)
- 2 tablespoons melted butter (if using topping)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Mix Ingredients: In a large mixing bowl, combine rice, chicken, broccoli, cream of chicken soup, sour cream, cheddar cheese, milk, garlic powder, onion powder, salt, and pepper.
- Spread Mixture: Spread the mixture into a greased 9×13-inch baking dish.
- Add Toppings: If using, mix crushed crackers or breadcrumbs with melted butter and sprinkle over the casserole. Top with additional cheddar and Parmesan cheese.
- Bake: Bake uncovered for 25–30 minutes until hot, bubbly, and golden brown.
- Serve: Let cool slightly before serving.

- You can substitute the cream of chicken soup with homemade or cream of mushroom.
- Frozen broccoli can be used—just thaw and drain before adding.
