Description

These Chicken Bell Pepper Ranch Burritos are a delicious Tex-Mex inspired dish that combines tender shredded chicken, colorful bell peppers, and creamy ranch seasoning all wrapped up in a warm flour tortilla. Perfect for a quick and satisfying meal!


Ingredients

For the filling:

  • 1 lb boneless, skinless chicken breasts, cooked and shredded
  • 1 tablespoon olive oil
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1 packet ranch seasoning mix
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1 cup cooked rice (optional)

For assembly:

  • 4 large flour tortillas

Instructions

  1. Sauté the vegetables: In a large skillet, heat olive oil over medium heat. Add bell peppers and onion, and sauté for 5–6 minutes until tender.
  2. Prepare the chicken mixture: Add shredded chicken to the skillet and sprinkle in the ranch seasoning. Stir in sour cream and mayonnaise, and cook for another 2–3 minutes until heated through and creamy.
  3. Assemble the burritos: Warm tortillas and lay each flat. Spoon rice (if using), chicken mixture, and shredded cheddar cheese into the center. Roll up tightly, folding in the sides as you go.
  4. Serve: Serve warm or toast in a skillet for a crispy finish.
