These Chicken Bell Pepper Ranch Burritos are a delicious Tex-Mex inspired dish that combines tender shredded chicken, colorful bell peppers, and creamy ranch seasoning all wrapped up in a warm flour tortilla. Perfect for a quick and satisfying meal!
Ingredients
For the filling:
- 1 lb boneless, skinless chicken breasts, cooked and shredded
- 1 tablespoon olive oil
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1/2 red onion, thinly sliced
- 1 packet ranch seasoning mix
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 cup shredded cheddar cheese
- 1 cup cooked rice (optional)
For assembly:
- 4 large flour tortillas
Instructions
- Sauté the vegetables: In a large skillet, heat olive oil over medium heat. Add bell peppers and onion, and sauté for 5–6 minutes until tender.
- Prepare the chicken mixture: Add shredded chicken to the skillet and sprinkle in the ranch seasoning. Stir in sour cream and mayonnaise, and cook for another 2–3 minutes until heated through and creamy.
- Assemble the burritos: Warm tortillas and lay each flat. Spoon rice (if using), chicken mixture, and shredded cheddar cheese into the center. Roll up tightly, folding in the sides as you go.
- Serve: Serve warm or toast in a skillet for a crispy finish.

- You can prep the filling ahead of time and store it in the fridge for up to 3 days.
