Description

Ingredients

For the filling:

  • 2 cups cooked shredded chicken
  • 1 ripe avocado (diced)
  • ½ cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • ¼ cup ranch dressing
  • ¼ teaspoon garlic powder
  • ¼ teaspoon chili powder
  • Salt and pepper to taste

For assembly:

  • 4 large flour tortillas
  • 1 tablespoon olive oil (for grilling)

Instructions

  1. In a medium bowl, combine the shredded chicken, diced avocado, cheddar cheese, Monterey Jack cheese, ranch dressing, garlic powder, chili powder, salt, and pepper. Stir gently to mix without mashing the avocado.
  2. Lay out the tortillas and divide the filling evenly among them, placing it in the center of each.
  3. Roll up the burritos tightly, folding in the sides as you go.
  4. Heat the olive oil in a large skillet over medium heat. Place the burritos seam-side down in the skillet and cook for 2–3 minutes per side, or until golden brown and crisp.
