Ingredients
For the filling:
- 2 cups cooked shredded chicken
- 1 ripe avocado (diced)
- ½ cup shredded cheddar cheese
- ½ cup shredded Monterey Jack cheese
- ¼ cup ranch dressing
- ¼ teaspoon garlic powder
- ¼ teaspoon chili powder
- Salt and pepper to taste
For assembly:
- 4 large flour tortillas
- 1 tablespoon olive oil (for grilling)
Instructions
- In a medium bowl, combine the shredded chicken, diced avocado, cheddar cheese, Monterey Jack cheese, ranch dressing, garlic powder, chili powder, salt, and pepper. Stir gently to mix without mashing the avocado.
- Lay out the tortillas and divide the filling evenly among them, placing it in the center of each.
- Roll up the burritos tightly, folding in the sides as you go.
- Heat the olive oil in a large skillet over medium heat. Place the burritos seam-side down in the skillet and cook for 2–3 minutes per side, or until golden brown and crisp.
- Serve warm with extra ranch or salsa if desired.
