Description

A refreshing and healthy Chicken Avocado Caprese Salad packed with juicy chicken, creamy avocado, fresh tomatoes, mozzarella, and basil, all drizzled with a tangy balsamic glaze.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 teaspoon Italian seasoning
  • 2 ripe avocados, sliced
  • 2 cups cherry tomatoes, halved
  • 8 oz fresh mozzarella, sliced or in balls
  • 1/4 cup fresh basil leaves
  • 2 tablespoons balsamic glaze

Instructions

  1. Season chicken breasts with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a skillet over medium heat. Cook the chicken for 5-6 minutes on each side or until fully cooked. Let rest, then slice.
  3. In a large bowl or on a serving platter, arrange sliced chicken, avocado, cherry tomatoes, and mozzarella.
  4. Sprinkle fresh basil leaves over the top.
  5. Drizzle with balsamic glaze just before serving.

Notes

  • You can use grilled chicken for extra flavor.
  • Substitute cherry tomatoes with heirloom tomatoes if preferred.
