A refreshing and healthy Chicken Avocado Caprese Salad packed with juicy chicken, creamy avocado, fresh tomatoes, mozzarella, and basil, all drizzled with a tangy balsamic glaze.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 teaspoon Italian seasoning
- 2 ripe avocados, sliced
- 2 cups cherry tomatoes, halved
- 8 oz fresh mozzarella, sliced or in balls
- 1/4 cup fresh basil leaves
- 2 tablespoons balsamic glaze
Instructions
- Season chicken breasts with salt, pepper, and Italian seasoning.
- Heat olive oil in a skillet over medium heat. Cook the chicken for 5-6 minutes on each side or until fully cooked. Let rest, then slice.
- In a large bowl or on a serving platter, arrange sliced chicken, avocado, cherry tomatoes, and mozzarella.
- Sprinkle fresh basil leaves over the top.
- Drizzle with balsamic glaze just before serving.
Notes
- You can use grilled chicken for extra flavor.
- Substitute cherry tomatoes with heirloom tomatoes if preferred.
- Add a squeeze of lemon juice to the avocado to prevent browning.
