Description

This comforting Chicken & Stuffing Casserole combines tender seasoned chicken breasts with savory stuffing, creamy soup, and optional cheese for a hearty family-friendly meal. Perfectly baked to golden perfection, it’s easy to prepare and great for a cozy dinner.

Ingredients

Chicken

  • 4 boneless, skinless chicken breasts (or thighs for extra flavor)
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Stuffing Mixture

  • 1 box (6 oz) stuffing mix (or homemade stuffing, if preferred)
  • 1 cup chicken broth
  • 1/2 cup sour cream (optional for creamier texture)

Toppings and Other Ingredients

  • 1 can (10.5 oz) cream of chicken soup (or mushroom soup for a twist)
  • 1/2 cup shredded cheddar cheese (optional)
  • 1 tablespoon butter (for greasing the casserole dish)
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare the Chicken: Preheat the oven to 350°F (175°C) to get ready for baking the casserole.
  2. Season the Chicken: Season the chicken breasts with salt, pepper, garlic powder, and onion powder. Optionally, lightly pan-sear the chicken in a skillet over medium heat for 2-3 minutes per side to add a golden color and extra flavor.
  3. Mix the Stuffing: In a large bowl, combine the stuffing mix, chicken broth, and sour cream (if using). Stir thoroughly to moisten the stuffing evenly and set aside.
  4. Prepare the Casserole Dish: Grease a 9×13-inch casserole dish with butter or non-stick spray to prevent sticking.
  5. Assemble the Layers: Place the seasoned chicken breasts evenly at the bottom of the casserole dish.
  6. Add the Stuffing: Spread the prepared stuffing mixture evenly over the chicken breasts, covering them completely.
  7. Top with Soup and Cheese: Pour the cream of chicken soup evenly over the stuffing layer. If desired, sprinkle shredded cheddar cheese on top for a cheesy finish.
  8. Bake the Casserole: Cover the dish with aluminum foil and bake in the preheated oven for 25-30 minutes. Remove the foil and bake an additional 10-15 minutes until the chicken reaches an internal temperature of 165°F and the stuffing turns golden brown.
  9. Garnish and Serve: Optionally garnish with fresh parsley before serving hot. This casserole pairs well with roasted vegetables or a fresh side salad.

Notes

  • Optional pan-searing of chicken adds extra flavor and a nice golden color but can be skipped for a quicker prep.
  • Sour cream is optional; it adds moisture and creaminess to the stuffing.
  • Choose mushroom soup instead of cream of chicken for a different flavor variation.
  • Using chicken thighs instead of breasts will result in a juicier, more flavorful dish.
  • Make sure the chicken reaches an internal temperature of 165°F to ensure it is safely cooked.
