Description

This Chicken and Spinach Casserole with Cream Cheese is a comforting and flavorful dish that’s perfect for a cozy family dinner. Creamy and cheesy with tender chicken and nutritious spinach, it’s a satisfying meal that’s easy to make.

Ingredients

For the casserole:

  • 2 cups cooked shredded chicken breast
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 4 cups fresh spinach, roughly chopped
  • 8 oz cream cheese, softened
  • ½ cup sour cream
  • ½ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese, divided
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp crushed red pepper flakes (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F and lightly grease a 9×9-inch baking dish.
  2. Sauté garlic and spinach: In a skillet, heat olive oil over medium heat, sauté garlic, then add spinach and cook until wilted.
  3. Prepare the cream cheese mixture: In a mixing bowl, combine cream cheese, sour cream, Parmesan, ½ cup mozzarella, onion powder, salt, pepper, and red pepper flakes.
  4. Combine ingredients: Add cooked chicken and spinach to the cream cheese mixture, stir until well combined.
  5. Bake: Spread the mixture in the baking dish, top with remaining mozzarella, and bake for 20-25 minutes until bubbly and golden.
  6. Serve: Let cool slightly before serving.

Notes

  • Great served over rice, pasta, or with crusty bread.
  • You can use frozen spinach—just thaw and squeeze out excess moisture.
