Ingredients
Filling
- 2 cups cooked chicken (shredded or diced)
- 1 large avocado (diced)
- 1 cup shredded Monterey Jack or cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
- 1 tablespoon lime juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
Other
- 4 large flour tortillas
- Olive oil or cooking spray for grilling
Instructions
- Prepare the filling: In a large bowl, gently combine the cooked chicken, diced avocado, shredded cheese, sour cream, chopped cilantro, lime juice, garlic powder, cumin, salt, and pepper until all ingredients are evenly incorporated.
- Assemble the burritos: Lay out the flour tortillas on a flat surface. Divide the filling evenly among the tortillas, placing it in the center of each one. Fold the sides inward and then roll each tortilla tightly to enclose the filling completely.
- Heat the skillet: Warm a skillet or grill pan over medium heat. Lightly grease the pan using olive oil or cooking spray to prevent sticking and encourage browning.
- Grill the burritos: Place the burritos seam-side down onto the hot skillet. Cook for about 2–3 minutes on each side, turning carefully, until the tortillas are golden brown and crispy on the outside.
- Serve: Remove the burritos from the skillet and serve warm. Optionally, accompany with extra sour cream, salsa, or lime wedges for added flavor.
Notes
- Use rotisserie chicken for quicker preparation and enhanced flavor.
- Add cooked rice, black beans, or chopped tomatoes to the filling if you want a heartier burrito.
- You can wrap the assembled burritos tightly and freeze them before grilling for a convenient, ready-to-cook meal later. Simply thaw before grilling.
