Description

Chicken Alfredo Lasagna Rolls are a delicious twist on traditional lasagna, featuring tender lasagna noodles rolled with a creamy mixture of shredded chicken, ricotta, and cheeses, all baked in a rich Alfredo sauce. This comforting Italian-American dish is perfect for a family meal and offers a creamy, cheesy, and flavorful experience with every bite.

Ingredients

Lasagna Rolls

  • 12 lasagna noodles
  • 2 cups cooked chicken, shredded
  • 2 cups ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 2 cups Alfredo sauce (store-bought or homemade)
  • 1 tsp garlic powder
  • 1/2 tsp dried Italian seasoning
  • Salt and pepper, to taste

Garnish

  • Fresh parsley, chopped (optional)

Instructions

  1. Cook Noodles: Cook the lasagna noodles according to package instructions until al dente. Drain the noodles carefully and set them aside to cool slightly to make them easier to handle for rolling.
  2. Prepare Filling: In a mixing bowl, combine shredded cooked chicken, ricotta cheese, half of the mozzarella cheese (1 cup), grated Parmesan cheese, garlic powder, dried Italian seasoning, salt, and pepper. Mix all ingredients thoroughly to create a creamy, flavorful filling.
  3. Assemble Rolls: Preheat your oven to 375°F (190°C). Spread a thin layer of Alfredo sauce on the bottom of a baking dish to prevent sticking. Place one cooked lasagna noodle on a flat surface and spread about 2 to 3 tablespoons of the chicken and cheese mixture evenly along the length of the noodle. Roll the noodle up tightly and place it seam-side down in the baking dish. Repeat this process with all remaining noodles and filling.
  4. Add Sauce and Cheese: Pour the remaining Alfredo sauce evenly over all the assembled lasagna rolls in the baking dish. Sprinkle the remaining mozzarella cheese over the top for a golden cheesy crust when baked.
  5. Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then remove the foil and continue baking uncovered for an additional 10 minutes or until the cheese is bubbly and golden brown on top.
  6. Garnish and Serve: Once baked, garnish the lasagna rolls with freshly chopped parsley if desired. Serve hot and enjoy this creamy, cheesy, and hearty meal.

Notes

  • For easier rolling, allow noodles to cool and handle gently to avoid tearing.
  • Use freshly grated Parmesan cheese for the best flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently in the oven or microwave to maintain creaminess.
  • Feel free to substitute chicken with turkey or a vegetarian protein if preferred.
