Description

Ingredients

Cookie Dough:

  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • ½ cup light brown sugar (packed)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 ½ cups sweetened shredded coconut


Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream Butter and Sugars: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add Eggs and Vanilla: Beat in the eggs one at a time, then mix in the vanilla extract.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  5. Finish Dough: Fold in the shredded coconut.
  6. Bake: Drop tablespoon-sized scoops of dough onto the prepared baking sheets, spacing them 2 inches apart. Bake for 10 to 12 minutes, or until the edges are lightly golden but centers remain soft.
  7. Cool: Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
