Ingredients
Cupcake:
- 1 box white cake mix
- 1 cup cherry limeade (or lemon-lime soda)
- 1/3 cup vegetable oil
- 3 large egg whites
- 1/4 cup maraschino cherry juice
- Zest of 1 lime
- 1/2 cup chopped maraschino cherries
Frosting:
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 2–3 tablespoons cherry limeade or lime juice
- Pink or red food coloring (optional)
- Lime slices and maraschino cherries for garnish
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
- Mix Cupcake Batter: In a large bowl, combine cake mix, cherry limeade, vegetable oil, egg whites, cherry juice, and lime zest. Fold in chopped cherries.
- Bake: Divide batter into cupcake liners and bake for 18–22 minutes until a toothpick comes out clean. Cool completely.
- Prepare Frosting: Beat butter until fluffy, then gradually add powdered sugar and limeade/juice until desired consistency. Mix in food coloring if using.
- Decorate: Pipe frosting onto cooled cupcakes and garnish with lime slice and maraschino cherry.
Notes
- You can use lemon-lime soda as a substitute for cherry limeade.
- For extra flavor, add a bit of lime juice to the frosting.
