Description

These Cherry Limeade Cupcakes are a delightful blend of sweet and tangy flavors, perfect for a summer treat or special occasion. The moist cherry-infused cake topped with creamy limeade frosting is sure to be a hit with everyone.


Ingredients

Cupcake:

  • 1 box white cake mix
  • 1 cup cherry limeade (or lemon-lime soda)
  • 1/3 cup vegetable oil
  • 3 large egg whites
  • 1/4 cup maraschino cherry juice
  • Zest of 1 lime
  • 1/2 cup chopped maraschino cherries

Frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 23 tablespoons cherry limeade or lime juice
  • Pink or red food coloring (optional)
  • Lime slices and maraschino cherries for garnish

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  2. Mix Cupcake Batter: In a large bowl, combine cake mix, cherry limeade, vegetable oil, egg whites, cherry juice, and lime zest. Fold in chopped cherries.
  3. Bake: Divide batter into cupcake liners and bake for 18–22 minutes until a toothpick comes out clean. Cool completely.
  4. Prepare Frosting: Beat butter until fluffy, then gradually add powdered sugar and limeade/juice until desired consistency. Mix in food coloring if using.
