Ingredients
For the brownie layer:
- 1/2 cup unsalted butter (melted)
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
For the cheesecake layer:
- 8 oz cream cheese (softened)
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
For the cherry swirl:
- 1/2 cup cherry pie filling
Instructions
- Preheat the oven: Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper.
- Mix brownie batter: Whisk melted butter and sugar, add eggs and vanilla, then mix in cocoa powder, flour, salt, and baking powder. Spread in pan.
- Prepare cheesecake layer: Beat cream cheese, sugar, egg, and vanilla until smooth. Spread over brownie batter.
- Add cherry swirl: Drop spoonfuls of cherry pie filling over the top and swirl gently into the cheesecake layer.
- Bake and cool: Bake for 35–40 minutes, cool completely, then chill for at least 2 hours before slicing.
Notes
- Use homemade cherry compote for a fresher flavor.
- These bars can be made a day in advance and stored in the refrigerator.
