Ingredients
For the cake:
- 2 ½ cups all-purpose flour
- 2 ½ teaspoons baking powder
- ½ teaspoon salt
- ¾ cup unsalted butter, softened
- 1 ½ cups granulated sugar
- 4 large egg whites
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract

- â…“ cup maraschino cherry juice
- 1 cup chopped maraschino cherries
For the frosting:
- 8 ounces cream cheese, softened
- ½ cup unsalted butter, softened
- 3 cups powdered sugar
- 2 tablespoons maraschino cherry juice
- ½ teaspoon almond extract
- pinch of salt
- optional: additional chopped cherries or halved maraschino cherries for garnish
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans and line the bottoms with parchment paper.
- Prepare the cake batter: Whisk together the flour, baking powder, and salt. Cream the butter and sugar, then add egg whites, vanilla, and almond extracts. Alternate adding dry ingredients and milk mixture, then fold in the cherries.
- Bake the cakes: Divide batter between pans and bake for 28–32 minutes. Cool in pans before transferring to wire racks.
- Make the frosting: Beat cream cheese and butter until smooth, add powdered sugar, cherry juice, almond extract, and salt. Frost the cake layers and decorate as desired.
