Ingredients
- 4 cups diced russet or Yukon gold potatoes
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 lb ground beef
- 1 packet taco seasoning (or homemade equivalent)
- 1/4 cup water
- 1 1/2 cups shredded cheddar cheese
- 2 green onions, chopped
- Sour cream, for serving
Instructions
- Preheat oven to 425°F. Dice potatoes and toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes, flipping halfway through, until crispy and golden.
- In a skillet over medium heat, cook the ground beef until browned. Drain grease, add taco seasoning and water, and simmer until thickened.
