Description

These Cheesy Taco Potatoes combine crispy roasted potatoes with savory taco-seasoned ground beef and melty cheddar cheese for a hearty, satisfying dish perfect for busy weeknights.


Ingredients

  • 4 cups diced russet or Yukon gold potatoes
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade equivalent)
  • 1/4 cup water
  • 1 1/2 cups shredded cheddar cheese
  • 2 green onions, chopped
  • Sour cream, for serving


Instructions

  1. Preheat oven to 425°F. Dice potatoes and toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes, flipping halfway through, until crispy and golden.
