Description
These Cheesy Stuffed Meatloaf Bites are a delicious and fun twist on traditional meatloaf. Juicy meatballs filled with gooey cheese make for a perfect appetizer or snack.
Ingredients
Meatball Mixture:
- 1 lb ground beef
 - ½ lb ground pork (optional)
 - 1 small onion, finely chopped
 - 2 cloves garlic, minced
 - 1 cup breadcrumbs
 - ½ cup milk
 - 1 large egg
 - 2 tablespoons ketchup
 - 1 tablespoon Worcestershire sauce
 - 1 teaspoon Italian seasoning
 - 1 teaspoon salt
 - ½ teaspoon black pepper
 
Cheese Filling:
- 4 oz cheddar or mozzarella cheese, cut into ½-inch cubes
 - Cooking spray or oil for greasing
 
Instructions
- Preheat the Oven: Preheat the oven to 375°F (190°C) and lightly grease a mini muffin tin or baking sheet.
 - Prepare Meat Mixture: Soak the breadcrumbs in milk for 2–3 minutes. In a large bowl, mix together the ground beef, pork, onion, garlic, soaked breadcrumbs, egg, ketchup, Worcestershire sauce, Italian seasoning, salt, and pepper until just combined.
 - Form Meatballs: Scoop about 2 tablespoons of the meat mixture, flatten it, place a cheese cube in the center, seal the meat around it, roll into a ball, and place on the prepared tin/sheet.
 - Bake: Bake for 18–22 minutes until fully cooked and cheese is melted. Let cool slightly before serving.
 
Notes
- You can use pepper jack or gouda cheese for different flavors.
 - The bites can be frozen after baking and reheated for later consumption.
