Description

These Cheesy Stuffed Meatloaf Bites are a delicious and fun twist on traditional meatloaf. Juicy meatballs filled with gooey cheese make for a perfect appetizer or snack.


Ingredients

Meatball Mixture:

  • 1 lb ground beef
  • ½ lb ground pork (optional)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • ½ cup milk
  • 1 large egg
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Cheese Filling:

  • 4 oz cheddar or mozzarella cheese, cut into ½-inch cubes
  • Cooking spray or oil for greasing

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F (190°C) and lightly grease a mini muffin tin or baking sheet.
  2. Prepare Meat Mixture: Soak the breadcrumbs in milk for 2–3 minutes. In a large bowl, mix together the ground beef, pork, onion, garlic, soaked breadcrumbs, egg, ketchup, Worcestershire sauce, Italian seasoning, salt, and pepper until just combined.
  3. Form Meatballs: Scoop about 2 tablespoons of the meat mixture, flatten it, place a cheese cube in the center, seal the meat around it, roll into a ball, and place on the prepared tin/sheet.
  4. Bake: Bake for 18–22 minutes until fully cooked and cheese is melted. Let cool slightly before serving.

Notes

  • You can use pepper jack or gouda cheese for different flavors.
  • The bites can be frozen after baking and reheated for later consumption.
