- 1.5 lbs baby potatoes, quartered
- 14 oz smoked sausage, sliced
- 2 tbsp olive oil
- 1 packet (1 oz) ranch seasoning mix
- 1 cup shredded cheddar cheese
- 2 tbsp chopped green onions (optional)
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss the quartered potatoes with olive oil, ranch seasoning mix, salt, and pepper.
- Spread the seasoned potatoes on a baking sheet and roast for 25 minutes.
- Add the sliced smoked sausage to the baking sheet, mix gently, and roast for an additional 15-20 minutes, until potatoes are tender and sausage is browned.
- Sprinkle shredded cheddar cheese over the hot potato and sausage mixture and return to oven for 5 minutes or until cheese is melted.
- Remove from oven and garnish with chopped green onions, if using. Serve hot.
Notes
- You can use any variety of smoked sausage (turkey, beef, pork).
- For extra crispiness, broil for the last 2-3 minutes.
- Use pre-shredded cheese for convenience or shred your own for better melting.
