Description

Quesadizzas are a quick and delicious twist on traditional quesadillas, combining the flavors of pizza and crispy tortillas. In just 15 minutes, you can enjoy a melty, cheesy quesadilla filled with mozzarella, Parmesan, pizza sauce, and your favorite toppings, cooked to golden perfection on the stovetop.

Ingredients

Quesadizzas

  • 4 flour tortillas (8-inch size)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup pizza sauce or marinara sauce
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup pepperoni slices or other favorite pizza toppings (e.g., bell peppers, olives, onions)
  • 2 tablespoons olive oil
  • Fresh basil (optional, for garnish)

Instructions

  1. Preheat skillet: Heat a large skillet or griddle over medium heat to prepare for cooking the quesadizzas.
  2. Oil tortillas: Lightly brush each flour tortilla on both sides with olive oil to ensure they cook evenly and develop a crispy, golden texture.
  3. Cook first side: Place one tortilla in the hot skillet and cook for 2–3 minutes until it turns lightly golden and crispy on one side.
  4. Add sauce and toppings: Flip the tortilla and spread a thin layer of pizza sauce evenly on the cooked side. Sprinkle mozzarella and Parmesan cheeses on top, then add your choice of pizza toppings such as pepperoni or vegetables.
  5. Top and seal: Place a second tortilla on top, with the oiled side facing out, and gently press down to seal the quesadizza together.
  6. Cook both sides: Continue cooking the quesadizza for another 2–3 minutes on each side, flipping carefully until the cheese melts and both tortillas become golden brown and crispy.
  7. Serve: Remove the quesadizza from the skillet, slice into wedges, garnish with fresh basil if desired, and serve immediately for the best flavor and texture.

Notes

  • Feel free to customize the toppings with your favorite pizza ingredients like mushrooms, olives, or cooked sausage.
  • Use a non-stick skillet to reduce the amount of olive oil needed and prevent sticking.
  • For a spicier version, include extra crushed red pepper flakes or jalapeños.
  • Serve with extra pizza sauce or ranch dressing for dipping.
  • To keep quesadizzas crispy while serving, place them on a wire rack instead of a plate.
