- 1/4 cup grated Parmesan cheese

- 1/4 teaspoon crushed red pepper flakes (optional)
- 1/2 cup pepperoni slices or other favorite pizza toppings (e.g., bell peppers, olives, onions)
- 2 tablespoons olive oil
- Fresh basil (optional, for garnish)
Instructions
- Preheat skillet: Heat a large skillet or griddle over medium heat to prepare for cooking the quesadizzas.
- Oil tortillas: Lightly brush each flour tortilla on both sides with olive oil to ensure they cook evenly and develop a crispy, golden texture.
- Cook first side: Place one tortilla in the hot skillet and cook for 2–3 minutes until it turns lightly golden and crispy on one side.
- Add sauce and toppings: Flip the tortilla and spread a thin layer of pizza sauce evenly on the cooked side. Sprinkle mozzarella and Parmesan cheeses on top, then add your choice of pizza toppings such as pepperoni or vegetables.
- Top and seal: Place a second tortilla on top, with the oiled side facing out, and gently press down to seal the quesadizza together.
- Cook both sides: Continue cooking the quesadizza for another 2–3 minutes on each side, flipping carefully until the cheese melts and both tortillas become golden brown and crispy.
- Serve: Remove the quesadizza from the skillet, slice into wedges, garnish with fresh basil if desired, and serve immediately for the best flavor and texture.
