Description

These Cheesy Mashed Potato Puffs are deliciously golden, crispy mini bites perfect for using up leftover mashed potatoes. Packed with melted cheese and fresh chives, they make a savory appetizer or side dish that’s easy to prepare and bake to perfection.

Ingredients

Main Ingredients

  • 2 cups mashed potatoes (leftover works great)
  • 2 large eggs
  • 1 cup shredded cheese (Monterey Jack or cheddar), divided
  • 2 tablespoons chopped fresh chives
  • Salt, to taste
  • Black pepper, to taste
  • Sour cream, for serving (optional)

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C) and grease a mini muffin tin thoroughly to prevent sticking.
  2. Mix ingredients: In a large mixing bowl, combine the mashed potatoes, eggs, ¾ cup of shredded cheese, and chopped chives. Season the mixture generously with salt and black pepper, stirring until all ingredients are well incorporated.
  3. Fill muffin cups: Spoon the potato mixture into each mini muffin cup, filling them nearly to the top to maximize puff size.
  4. Add cheese topping: Sprinkle the remaining ¼ cup of shredded cheese evenly over the tops of each filled muffin cup for a melty, golden crust.
  5. Bake the puffs: Place the muffin tin in the oven and bake for 15 to 20 minutes or until the puffs are golden brown on top and set firmly.
  6. Cool and serve: Allow the puffs to cool slightly in the pan before removing. Serve warm, optionally with a dollop of sour cream for added richness and tang.

Notes

  • Leftover mashed potatoes work best for this recipe as they hold together better.
  • You can substitute the cheese with any melty cheese such as mozzarella or gouda.
  • Adding fresh herbs like parsley or thyme can enhance flavor variations.
  • Ensure muffin tin is well greased or use silicone molds for easy removal.
  • These puffs can be served as appetizers, snacks, or as a side dish to a main meal.
