Description

This Cheesy Loaded Meatloaf Casserole is the ultimate comfort food dish. A layer of seasoned ground beef topped with mashed potatoes, cheddar cheese, bacon, and green onions, baked to perfection. It’s a hearty and satisfying meal that the whole family will love.


Ingredients

For the Meatloaf Layer:

  • 1 1/2 pounds ground beef
  • 1/2 cup breadcrumbs
  • 1/2 cup milk
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup ketchup

For the Topping:

  • 2 cups mashed potatoes
  • 1 1/2 cups shredded cheddar cheese
  • 4 slices cooked bacon, chopped
  • 2 green onions, sliced

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Prepare the meatloaf layer: In a large mixing bowl, combine ground beef, breadcrumbs, milk, egg, Worcestershire sauce, garlic powder, onion powder, salt, pepper, and 1/4 cup of ketchup. Press mixture into a greased baking dish.
  3. Bake the meatloaf: Spread remaining ketchup over the top and bake for 20–25 minutes.
  4. Add the toppings: Spread mashed potatoes over the meatloaf, top with cheddar cheese and bacon.
  5. Finish baking: Bake for an additional 15–20 minutes until cheese is melted and bubbly.
  6. Serve: Let cool for 5 minutes, then sprinkle with sliced green onions before serving.
