Ingredients
For the Meatloaf Layer:
- 1 1/2 pounds ground beef
- 1/2 cup breadcrumbs
- 1/2 cup milk
- 1 large egg
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup ketchup
For the Topping:
- 2 cups mashed potatoes
- 1 1/2 cups shredded cheddar cheese
- 4 slices cooked bacon, chopped
- 2 green onions, sliced
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C).
- Prepare the meatloaf layer: In a large mixing bowl, combine ground beef, breadcrumbs, milk, egg, Worcestershire sauce, garlic powder, onion powder, salt, pepper, and 1/4 cup of ketchup. Press mixture into a greased baking dish.
- Bake the meatloaf: Spread remaining ketchup over the top and bake for 20–25 minutes.
- Add the toppings: Spread mashed potatoes over the meatloaf, top with cheddar cheese and bacon.
- Finish baking: Bake for an additional 15–20 minutes until cheese is melted and bubbly.
- Serve: Let cool for 5 minutes, then sprinkle with sliced green onions before serving.

- You can use leftover mashed potatoes or store-bought to save time.
- Try mixing in a little sour cream or cream cheese with the mashed potatoes for extra creaminess.
- Ground turkey can be used as a leaner alternative to beef.
