Description

This Cheesy Jalapeño Popper Pasta Salad is a delightful twist on the classic pasta salad, featuring creamy flavors with a spicy kick from jalapeños. Perfect for a summer side dish or a potluck gathering.


Ingredients

Pasta:

  • 8 oz elbow macaroni or rotini pasta

Dressing:

  • 8 oz cream cheese (softened)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper

Additional Ingredients:

  • 1 1/2 cups shredded cheddar cheese
  • 46 slices bacon (cooked and crumbled)
  • 23 jalapeños (seeded and finely chopped)
  • 2 green onions (sliced)


Instructions

  1. Cook the Pasta: Cook the pasta according to package directions. Drain and rinse with cold water to cool completely.
  2. Prepare the Dressing: In a large bowl, whisk together the cream cheese, mayonnaise, sour cream, vinegar, garlic powder, onion powder, and black pepper until smooth.
  3. Combine Ingredients: Add the cooled pasta, cheddar cheese, crumbled bacon, chopped jalapeños, and green onions to the bowl. Toss until everything is well coated and evenly combined.
  4. Chill and Serve: Cover and refrigerate for at least 1 hour before serving to allow flavors to meld. Stir again just before serving.
