This Cheesy Jalapeño Popper Pasta Salad is a delightful twist on the classic pasta salad, featuring creamy flavors with a spicy kick from jalapeños. Perfect for a summer side dish or a potluck gathering.
Ingredients
Pasta:
- 8 oz elbow macaroni or rotini pasta
 
Dressing:
- 8 oz cream cheese (softened)
 - 1/2 cup mayonnaise
 - 1/2 cup sour cream
 - 1 tablespoon apple cider vinegar
 - 1/2 teaspoon garlic powder
 - 1/2 teaspoon onion powder
 - 1/4 teaspoon black pepper
 
Additional Ingredients:
- 1 1/2 cups shredded cheddar cheese
 - 4–6 slices bacon (cooked and crumbled)
 - 2–3 jalapeños (seeded and finely chopped)
 - 2 green onions (sliced)
 
Instructions
- Cook the Pasta: Cook the pasta according to package directions. Drain and rinse with cold water to cool completely.
 - Prepare the Dressing: In a large bowl, whisk together the cream cheese, mayonnaise, sour cream, vinegar, garlic powder, onion powder, and black pepper until smooth.
 - Combine Ingredients: Add the cooled pasta, cheddar cheese, crumbled bacon, chopped jalapeños, and green onions to the bowl. Toss until everything is well coated and evenly combined.
 - Chill and Serve: Cover and refrigerate for at least 1 hour before serving to allow flavors to meld. Stir again just before serving.
 
Notes
- For a spicier salad, leave some jalapeño seeds in or add a dash of hot sauce.
 - You can use Greek yogurt instead of sour cream for a lighter option.
