Description

A rich and comforting casserole made with frozen hash browns, diced ham, cheddar cheese, and a creamy base, perfect for brunch, dinner, or potlucks.

Ingredients

  • 1 (32 oz) bag frozen hash browns
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup butter, melted
  • 2 cups shredded sharp cheddar cheese
  • 1 small onion, diced
  • 2 cups diced ham
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F. Grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine frozen hash browns, cream of chicken soup, sour cream, melted butter, shredded cheddar cheese, diced onion, diced ham, salt, and pepper. Mix thoroughly.
  3. Spread the mixture evenly into the prepared baking dish.
  4. Bake uncovered for 35–40 minutes, until bubbly and golden on top.
  5. Let the casserole cool for a few minutes before serving. Garnish with chopped fresh chives if desired.

Notes

  • Use hash browns directly from the freezer for best texture.
  • Leftover holiday ham works great in this recipe.
  • Grate your own cheese for better melt and flavor.
  • To make it gluten-free, use gluten-free soup and hash browns.
  • Can be assembled ahead and refrigerated overnight; add 5–10 minutes to baking time if cold.
